Moroccan-style artichoke hearts and spinach in Harissa and “preserved” lemon

Cookies, yogurt, popcorn, chicken and beans, jelly beans, an apple, some bread and some crackers. This is what I ate yesterday (Saturday) by...1….pm. 

I decided to eat clean and healthy the next day. Just salads and vegetables. The recipe below is one of the  “clean Sunday” dishes. 

  • 1 bag of  frozen quartered artichoke hearts (12 oz)

  • 1 cup fresh spinach 

  • 1 tsp. paprika

  • 1 tbsp. oil

  • 1tsp. Harissa or ½ tsp. hot paprika

  • 2 garlic cloves, crushed 

  • ¾ tsp. cumin 

  • 2 tbsp. preserved lemon OR ½ lemon, finely chopped 

  • Salt and pepper 

  1. If you don’t have preserved lemon, start by cooking the lemon. Heat the oil, add the lemon, garlic and paprika. Cook for 7 minutes, stirring occasionally. 

  2. Add the rest of the ingredients but the spinach and cook for 10 minutes. 

  3. Add the spinach and cook for 5 more minutes.
