Moroccan-inspired Tzatziki
I love Tzaxiki. It’s healthy and we eat it either as a refreshing summery soup or as a dressing to a salad .
Here is a zesty version of it with a Moroccan “twist”.
2 cucumbers, washed
3 radishes, washed
1 garlic clove
½ tsp. black pepper
¾ tsp. black pepper
1/4 red chili pepper, chopped (optional)
½ tsp. cumin
½ cup low-fat Greek yogurt
1 tbsp. chopped parsley
1 tbsp. chopped dill
Using a grater, grate the cucumbers, garlic and radishes. Squeeze excess water.
Mix with the rest of the ingredients and fix seasoning.
