Flourless meat Kibbeh

For the dough:

  • ¾ cup ground beef 

  • 3/4 cup mashed potatoes

  • 1 1/2 cups matzah meal

  • 3 eggs, beaten 

  • 1 tbsp. olive oil 

  • ¼ tsp. baking powder 

  • 1 cup warm water 

  • 1 tbsp. salt

  • ½ tsp. black pepper 

  • 1 tsp.Paprika

  • ½ tsp.corriander

  1. Mix all of the ingredients but the water. 

  2. Start adding the water gradually and keep kneading for 5 minutes. The mix should be moist but firm. 

  3. Let it rest for 20 minutes. Make the filling in the meantime. 

For the filling:

2 ½ cups ground beef

1 medium-sized onion, chopped

2 garlic cloves, crushed 

1 tbsp. olive oil 

½ tsp. coriander 

½ tsp. allspice

¼ tsp. Cinnamon 

1 tbsp. salt 

½ tsp.cumin

¾ tsp. paprika 

Pepper 

  1. In a big pot, heat the oil and add the onion. 

  2. Sauté for 3-4 minutes and add the meat. 

  3. Sauté the meat, stirring occasionally. 

  4. Add the garlic and the spices and keep cooking till the meat changes it color. 

  5. Remove from the heat and let it cool off. 

Making the dumplings:

  1. Take a small piece of the dough and using your finger, start forming a cup (follow the picture).

  2. Put some filling in the center and start closing the cup. 

  3. Roll it a bit in your hands in order to close it well and roll it a bit to form an oval shape. 

  4. Dip-fry or freeze
