Vegetarian kibbehlach- kibbeh and/or kneidalach
For the dough:
¾ cup cilantro leaves
½ cup parsley leaves
1 small onion
½ tsp. paprika
2 cups matzah meal
3-4 eggs
2 tbsp. oil
1 cup warm water
½ tsp. baking powder
Salt and pepper
Place the vegetables in a food processor bowl and chop. Transfer to a bowl.
Add the rest of the ingredients except for the water and mix.
Start adding the water till a dough forms. It might be a bit sticky but it should be manageable.
Let it rest for 20 minutes and start making the filling in the meantime.
For the filling:
1 medium-sized onion
1 medium-sized carrot, peeled
¼ cup dill
1 small zucchini
4-5 celery stalks
1 garlic clove
2 tbsp. olive oil
Salt and pepper
Place the vegetables in a food processor bowl and chop.
Heat the oil in a wide skillet. Add the vegetables and sauté for 5 minutes.
Season and cook for 3 more minutes. Remove from the heat and let it cool off.
Making the dumplings:
Take a small piece of the dough and, using your finger, start forming a cup (follow the picture).
Put some filling in the center and start closing the cup.
Roll it a bit in your hands in order to close it well and roll it a bit to form an oval shape.
Freezes, out in a hot boiling soup and let it simmer for 10 minutes or dip-fry.
