Stella’s rum-less rum balls (GF)
1 cup coconut
1 cup ground toasted pecans or walnuts
1 cup ground toasted almonds
½ cup sugar
1/2 cup honey
1/2 cup cocoa powder
1/2 cup rum or orange juice
Orange zest
Cook everything together on medium low. Keep stirring until the paste detaches from the sides of the pan (about 10 minutes).
Let it cool off a bit.
When it is manageable, make balls and roll them in coconut, chocolate sprinkles or chocolate cocoa.
Refrigerate.
