Stella’s rum-less rum balls (GF)

  • 1 cup coconut

  • 1 cup ground toasted  pecans or walnuts 

  • 1 cup ground toasted almonds 

  • ½ cup sugar 

  • 1/2 cup honey

  • 1/2 cup cocoa powder

  • 1/2 cup rum or orange juice 

  • Orange zest 

  1. Cook everything together on medium low. Keep stirring until the paste detaches from the sides of the pan (about 10 minutes). 

  2. Let it cool off a bit. 

  3. When it is manageable, make balls and roll them in coconut, chocolate sprinkles or chocolate cocoa. 

  4. Refrigerate.
