Herbed zucchini-turkey burgers:
1 lb. ground turkey
1 cup of herbs: mint, parsley and cilantro
3 scallions
3 garlic cloves
1 tbsp. Olive oil
1 tsp. cumin
½ tsp. hot paprika
Salt and pepper
1 big zucchini
1 egg (you may need to use only part of it. It depends on the consistency)
2 tbsp. breadcrumbs
In a food processor, place all the vegetables and chop.
Mix with the rest of the ingredients. Fix seasoning.
Form patties and grill, 10 minutes on each side.
