‘‘Zaalouk’’- Moroccan Eggplant Salad

Zaalouk is a staple salad in every Moroccan house. It goes so well with dishes

  • 1 c eggplant pulp or 1 roasted eggplant (link)

  • ½ cup roasted peppers (link) , cubed

  • 2 tbs from the chopped parsley and garlic mix

  • 2 tbs preserved lemons (link)

  • 1 tbs lemon juice 

  • 3 tbs oil 

  • Salt and pepper

Mix all of the ingredients. Fix seasoning.
