‘‘Zaalouk’’- Moroccan Eggplant Salad
Zaalouk is a staple salad in every Moroccan house. It goes so well with dishes
1 c eggplant pulp or 1 roasted eggplant (link)
½ cup roasted peppers (link) , cubed
2 tbs from the chopped parsley and garlic mix
2 tbs preserved lemons (link)
1 tbs lemon juice
3 tbs oil
Salt and pepper
Mix all of the ingredients. Fix seasoning.
