Cauliflower “Tabouli”

  • ½ cauliflower head, washed and cut

  • 1 cup of mixed herbs: mint, parsley and cilantro

  • 2 scallions

  • 1/4 lemon juice

  • Some lemon zest

  • Salt and pepper

  • 1/4 cup olive oil

  • 3 tbsp. toasted almonds

  • ¼ c. chopped dried apricots or cranberries

  1. Using a food processor, chop the cauliflower and transfer to a bowl. It should be like coarse couscous.

  2. Place the vegetables in the food processor bowl (no need to wash it from the cauliflower) and chop.

  3. Mix everything together and fix seasoning if necessary.
