Quinoa and meat stuffed turnips in pomegranate and prune sauce

My mom was a huge fan of turnips, a vegetable that for years has suffered from bad PR but in the past years it looks like turnips are gaining fans and fame.

  • 5 turnips, halved and cored (don’t throw away the inside of the turnips)

  • ½ cup quinoa, soaked in hot water for an hour and drained

  • ¾ cup parsley

  • ¼ cup fresh mint

  • 1 onion

  • ½ lb. ground turkey / beef or a mix of both

  • ½ tsp. allspice

  • Salt and pepper

  • 2 tbsp. olive oil

  • 1 egg beaten

  1. In a food processor, chop the herbs, the onion and the turnips’ inside.

  2. Heat a wide pot with the olive oil. Saute the herb mix for 5 minutes and transfer to a bowl to cool off.

  3. Add all of the ingredients and knead the mix for a few minutes.

  4. Stuff the vegetables with the mix and line in a baking pan.

  5. Pour the sauce on the sides of the pan but not directly on the vegetables.

  6. Cook for an hour covered and 20 more minutes uncovered.

  7. Garnish with pine nuts and dried mint
