Mashed root vegetables

  • 1 potato, peeled and cut

  • 1 parsnip, peeled and cut

  • 2 small turnips, peeled and cut

  • 1 Daikon, peeled and cut

  • 1 celery root, peeled and cut

  • ½ onion

  • 3 cups vegetable stock

  • 1 tsp. black pepper

  • 1 tbsp. salt

  • 1 tsp. white pepper

  • ¼ cup olive oil

  1. Put the vegetables in a big pot and add the rest of the ingredients.

  2. Bring to a boil and cook till the vegetables are cooked. Strain and keep the liquid.

  3. Mash the vegetables and add some of the liquid to get the consistency of mashed potatoes.
