Mashed root vegetables
1 potato, peeled and cut
1 parsnip, peeled and cut
2 small turnips, peeled and cut
1 Daikon, peeled and cut
1 celery root, peeled and cut
½ onion
3 cups vegetable stock
1 tsp. black pepper
1 tbsp. salt
1 tsp. white pepper
¼ cup olive oil
Put the vegetables in a big pot and add the rest of the ingredients.
Bring to a boil and cook till the vegetables are cooked. Strain and keep the liquid.
Mash the vegetables and add some of the liquid to get the consistency of mashed potatoes.
