Lamb and pine nuts kebab on a cinnamon stick
Mondays and Thursdays were the “Shuk” (market) days for my mom.
Meaning, she would go shopping for fresh produce twice a week. On those days my mom would make a light meal, grilled meats and a fresh salad.
The kitchen was packed with grocery bags, full of vegetables and fruits when we sat down for a light lunch.
1 lb ground lamb
½ bunch parsley
1 medium size onion
1 big garlic clove
1-2 tbsp pine nuts- optional
1 tbsp. salt
3/4 tsp. pepper
1/2 tsp. cinnamon
Cinnamon sticks
In a food processor chop the parsley, the onion and garlic. Transfer to a bowl Add the meat, the pine nuts and the spices.
Mix well. Let it rest for about 30 minutes. Form an oval-shaped kebabs and stick inside a cinnamon stick.
Grill them on a grill for 15 minutes. Serve with hummus and chopped salad.
