Lamb and pine nuts kebab on a cinnamon stick

Mondays and Thursdays were the “Shuk” (market) days for my mom.

Meaning, she would go shopping for fresh produce twice a week. On those days my mom would make a light meal, grilled meats and a fresh salad.

The kitchen was packed with grocery bags, full of vegetables and fruits when we sat down for a light lunch.

  • 1 lb ground lamb

  • ½ bunch parsley

  • 1 medium size onion

  • 1 big garlic clove 

  • 1-2 tbsp pine nuts- optional 

  • 1 tbsp. salt

  • 3/4 tsp. pepper

  • 1/2 tsp. cinnamon

  • Cinnamon sticks 

  • In a food processor chop the parsley, the onion and garlic. Transfer to a bowl Add the meat, the pine nuts and the spices. 

  • Mix well. Let it rest for about 30 minutes. Form an oval-shaped kebabs and stick inside a cinnamon stick. 

  • Grill them on a grill for 15 minutes. Serve with hummus and chopped salad.
