“Fatush”- Arabic vegetable salad

This salad is from the Arabic cuisine. It’s one of my favorite salads and it can serve as a whole meal with the tahini and pita crisps that top it.

  • 3 tomatoes

  • 4 radishes 

  • 2 scallions 

  • 3 cucumbers 

  • Some parsley 

  • Some fresh mint

  • 1 tsp sumac 

  • 1-2 tbsp lemon juice 

  • 1 tbsp olive oil 

  • basic tahini sauce

For the pita toasts:

  • 1 pita, cut into triangles

  • 1-2 tbsp. olive oil

  • 1 tsp. zaatar

Preheat the oven to 400

Mix the zaatar and the olive oil and brush the triangles with it.

Put in the oven for 7 minutes. In the meantime make the salad.

Chop all of the veggies. Add the spices and mix. Fix seasoning. 

Top the salad with the pita toasts and generously drizzle it with the tahini sauce.
