Coconut, lemon and semolina Ghriba

  • 125 gr. dry unsweetened coconut 

  • 125 gr. fine semolina

  • 7 tbsp. oil

  • 1/2 cup . sugar

  • 1 tsp. Baking powder

  • 1 whole egg + 1 yolk

  • 1 tbsp. Orange blossom water

  • Lemon zest from 1 lemon

  • 1 tbsp. Lemon juice

  1. Mix all of the ingredients but the semolina.

  2. Start adding the semolina gradually while mixing the batter. The batter should be moist but not runny. You might not need to add all of the semolina

  3. Shape small balls and roll them in the powdered sugar.

  4. Bake (365) for 15 minutes.. Cookies should be chewy and light-colored.
