Date-walnut Maamoul Cookies

  • 2 c flour

  • ½ c semolina 

  • 1 tsp baking powder 

  • 170 gr “smart balance” “butter”

  • Vanilla extract 

  • ¼ c oil 

  • 1 tsp orange blossom water mixed into ¼ c water

Filling:

  • 300 gr pitted dates (or date spread)

  • 1 tsp cinnamon

  • 1 tsp cardamom 

  • ½ tsp clove

  • ¾ coarsely crushed walnuts 

  1. Mix the dry ingredients in a mixer. 

  2. Add the rest of the ingredients and mix till it all forms together. Let it rest for at least an  hour or even a night. 

  3. 3. Mix all of the filling ingredients

  4. I used a special Maamoul mold but you can make the shape yourself (flatten a piece of dough, put the filling in the center and form a ball)

  5. Bake for 40 minutes (380°)

  6. Dust with powdered sugar
