Date-walnut Maamoul Cookies
2 c flour
½ c semolina
1 tsp baking powder
170 gr “smart balance” “butter”
Vanilla extract
¼ c oil
1 tsp orange blossom water mixed into ¼ c water
Filling:
300 gr pitted dates (or date spread)
1 tsp cinnamon
1 tsp cardamom
½ tsp clove
¾ coarsely crushed walnuts
Mix the dry ingredients in a mixer.
Add the rest of the ingredients and mix till it all forms together. Let it rest for at least an hour or even a night.
3. Mix all of the filling ingredients
I used a special Maamoul mold but you can make the shape yourself (flatten a piece of dough, put the filling in the center and form a ball)
Bake for 40 minutes (380°)
Dust with powdered sugar
