GF Hazelnut and chocolate cookies

  •  ⅓ cup soft butter or margarine 

  • 1 ½ cup toasted and ground hazelnuts 

  • ½ cup potato starch 

  • ¾ cup sugar 

  • ⅛ tsp. baking powder 

  • ¼ tsp. salt

  • 1 egg

  • ½ cup chocolate chips 

  • ½ cup hazelnuts, toasted and coarsely crushed 

  1. Preheat the oven (365°).

  2. Mix all of the ingredients but the last too. Don’t overmix. 

  3. Add the chocolate chips and crushed hazelnuts and mix. 

  4. Let the dough rest in the fridge for 20 minutes. 

  5. Form small balls and place the cookies 2 inches apart on a lined baking tray. 

  6. Freeze the cookies for 30 minutes. 

  7. Bake for 18-20 minutes till they are firm but not dry.
