Fazuelos
Fazuelos-crispy, fried cookies
These Moroccan cookies are made of pasta-like dough. They are light, flaky and delicious. My mom used to make them for special family gathering, occasions or holidays.
The secret is in rolling the dough out as thinly as possible. I use a pasta machine for this step.
4 eggs
4 tbsp. oil
4 tbsp. Water
3.5-4 c. all-purpose flour
oil for frying
Mix all of the ingredients. Let the dough rest in the fridge for a few hours. The dough should be elastic but not soft.
Divide the dough into 8 balls. Roll out each ball out as thin as possible, using a pasta machine if you have.
Cut into long strips and cover.
Heat the frying oil. Twist one end of the strip on a fork and put in the oil.
Keep folding the dough in the oil, making sure each part is fried before you continue folding. The cookies are very crispy and light-colored.
Powder with powdered sugar.
