Chebakia cookies

Chebakia is by far one of the most famous Moroccan cookies. It is normally served on special occasions like weddings, Henna ceremonies and holiday gatherings. The cookies are fried and then dipped in a sticky syrup.

There are many versions to the Chebakia. Here is one of them:

  • 1 cup oil

  • 1 cup water

  • 1 tbsp. vinegar

  • 6-7 cups all-purpose flour

  • Oil for frying

  • Sesame for decoration


  1. Mix all the ingredients and let it rest for several hours. 

  2. Divide the dough into 8 balls. Roll out each dough into a thin square and cut each square into even rectangles. 

  3. Using a pastry wheel, make 4-5 evenly-spaced cuts, lengthwise,  INSIDE the rectangle and not all the way through the ends of the dough. 

  4. Fold each rectangle in half and then fold in half again. Insert one end inside like twisting a bagel and pinch it. 

  5. Fry the cookies in the oil. Let the cookies cool off and make the syrup in the meantime.
