“Chermola”- Moroccan-inspired salad dressing

This dressing is inspired by the Moroccan lemony Chermola sauce. 

Chermola is made of lots of paprika, oil, garlic and lemon and is usually served as a dip for fried fish. 

I changed it a little bit and added some honey  so I can dress a salad with this aromatic dressing.

I dressed a mixed greens salad with it and added some chopped dates to balance out the sourness. 

  • ½ cup olive oil 

  • 1 bunch cilantro, leaves only 

  • 2 garlic cloves

  • 1 tsp. paprika 

  • ½ tsp. smoked paprika 

  • ½ tsp. red pepper flakes 

  • ⅓ cup lemon juice 

  • 3 lemon slices 

  • ½ hot or mild pepper 

  • 1 tsp. honey 

  1. In a good processor, put all the ingredients and process well. 

  2. Fix seasoning. Transfer to a jar and store in the fridge.
