Abadi-style savory sesame and super crispy cookies

The recipe below is one version out of many of the most famous savory cookies in Israel, manufactured by the family-owned “Abadi”. .They have been in the market forever and go very well with a cup of mint tea.

I have to warn you ,though, that it’s very hard to stop after 2 or 3 cookies…

  • 2 cups all-purpose flour

  • 3 tbsp. butter or “Smart Balance” butter

  • ½ cup oil

  • 1 tsp. baking powder

  • 4 tbsp. water

  • ¾ tsp. Salt

  • Optional: 1 tsp. of dried garlic / dried onion chips / everything but bagel seasoning / fennel seeds / cumin seeds 

  • Egg wash

  • Toasted sesame seeds

  1. Preheat the oven to350 degrees

  2. Put all of the ingredients in a bowl and mix till a dough forms.

  3. Let the dough rest for 15 minutes

  4. Take a small piece of dough (about 1 tbsp.) and roll it  into a rope. Then form a ring by pinching the edges together. Place in a lined baking tray.

  5. Brush the cookies with egg wash and sprinkle with sesame seeds

  6. Bake for 20-25 minutes till the cookies are golden brown.
