Moroccan green Swiss chard Salad

There are some flavors you grow up with but you don’t grow to appreciate them As a child I was a picky eater and really wished my mom had made more “junk food”

My mom cooked so many vegetable dishes that I just didn’t like

when I grew older, I learned to appreciate the healthy and flavorful foods Among them is the salad below:

  • 1 big bunch of Swiss chard, washed and chopped

  • 2 garlic cloves, crushed 

  • 1 tbsp paprika,

  • 2 tbsp tomatoes paste 

  • 4 tbsp oil

  • Salt 

  • 3 tbsp lemon juice 

  • 1/3 c water 

  • 1 tsp cumin 

    1. In a skillet, “fry” the Swiss chard without adding the oil yet, for 4 minutes.

  • Add the oil and cook for 5 minutes, till it gets wilted.

  • Add the rest of the ingredients and continue cooking for 10 more minutes.
