Moroccan roasted peppers salad

  • 2 red bell peppers or if you are using store-bought fire-roasted peppers then 1 c roasted peppers, cut into strips (

  • 2 tbsp preserved lemons (optional)

  • 2 tbsp lemon juice 

  • 3/4 tsp. salt

  • 1/2 tsp. black pepper

  • 2 tbsp oil 

  • 2 tbsp chopped parsley 

  • 2 garlic clove, thinly sliced 

1.Roast the peppers on open fire or broil them till they are well-roasted. 

2. Place in a plastic bag and leave for 15 minutes. It will be easier to peel them off. Transfer to a colander and drain.

3. Peel off and cut them into strips.

4.Mix with the rest of the ingredients.
