Moroccan roasted peppers salad
2 red bell peppers or if you are using store-bought fire-roasted peppers then 1 c roasted peppers, cut into strips (
2 tbsp preserved lemons (optional)
2 tbsp lemon juice
3/4 tsp. salt
1/2 tsp. black pepper
2 tbsp oil
2 tbsp chopped parsley
2 garlic clove, thinly sliced
1.Roast the peppers on open fire or broil them till they are well-roasted.
2. Place in a plastic bag and leave for 15 minutes. It will be easier to peel them off. Transfer to a colander and drain.
3. Peel off and cut them into strips.
4.Mix with the rest of the ingredients.
