GF Chocolate rolled cookies
:
1/2 cup soft butter or margarine
2 eggs
1 cup potato starch
1 ¼ cup unsweetened dried shredded coconut
1 cup almond meal
1 tsp. baking soda
¼ cup powdered sugar
A pinch of salt
For filling:Any kind of spread you like
Powdered sugar for dusting
In a mixer beat the butter with the sugar.
Add the eggs and keep beating for 2 more minutes.
Add the rest of the ingredients and mix. If the dough is too sticky, add some more potato starch.
Refrigerate for 30 minutes.
Divide the dough into 4 balls.
On a floured surface, roll out each ball. Spread with Nutella.
Roll it and transfer carefully to a lined baking tray.
Using a knife, gently make marks on the rolls.
Bake for 30 minutes.
Let the cookies cool off and cut into slices according to the marks.
Dust with powdered sugar.
