GF Chocolate rolled cookies

:

  • 1/2 cup soft butter or margarine 

  • 2 eggs

  • 1 cup potato starch

  • 1 ¼ cup unsweetened dried shredded coconut 

  • 1 cup almond meal 

  • 1 tsp. baking soda 

  • ¼ cup powdered sugar 

  • A pinch of salt


    For filling:

  • Any kind of spread you like 

  • Powdered sugar for dusting 

  1. In a mixer beat the butter with the sugar. 

  2. Add the eggs and keep beating for 2 more minutes. 

  3. Add the rest of the ingredients and mix. If the dough is too sticky, add some more potato starch. 

  4. Refrigerate for 30 minutes. 

  5. Divide the dough into 4 balls. 

  6. On a floured surface, roll out each ball. Spread with Nutella.

  7. Roll it and transfer carefully to a lined baking tray.

  8. Using a knife,  gently make marks on the rolls. 

  9. Bake for 30 minutes. 

  10. Let the cookies cool off and cut into slices according to the marks. 

  11. Dust with powdered sugar.
