Basic Pita bread
Pita bread is a very popular Middle Eastern type of pocket flatbread. We usually bought fresh pita bread in bakeries , straight from the oven.
In general, I am not big on freezing. Still, you can freeze pita as long as it’s still fresh.
4 c flour
1 tbsp + ½ tsp dry yeast
3 tbsp oil
1 tbsp sugar
1 tsp. salt
About 2 c lukewarm water
Mix all ingredients in a mixer. Start with 1 ½ c of water and add more if you need. The dough should be elastic but not runny.
knead for 10 minutes. Let the dough rest for 10 minutes, covered.
Divide it into 8-9 balls and let the dough rest for 5 more minutes.
Roll each ball out just a little bit into a round flat bread (the pita shouldn’t be too thin).
5. Cook in a skillet on stove top (no need to grease it) 1-2 minutes on each side. Try not to burn the pita.
