Mixed greens salad with honey- orange dressing dressing, two way-apples and leek chips

  • 3 cups mixed greens

  • 1 green apple, cut into thin wedges

For the leeks chips:

  • 2 leeks 

  • 1 tbsp. flour

  • Salt and pepper

  • Oil for frying

For the apple chips:

  • 1 red apple, thinly sliced

  • 1 tsp.sugar

For the dressing:

  • ¼ cup olive oil

  • 1 tbsp. vinegar

  • 1 tbsp. orange juice

  • ½ tsp. black pepper

  • ½ shallot onion, finely chopped

  • 2 tbsp. lemon juice

  • 2 tbsp. honey

  • ¾ tsp.salt

  1. Heat the oven (380)

  2. Sprinkle the red apple slices with some sugar and put in the oven to bake.

  3. Remove the green part from the leeks and slice the white part into thin slices.

  4. Sprinkle the leeks with some flour, salt and pepper. Fry in hot oil till crispy and brown.

  5. Mix the ingredients of the dressing.

  6. To assemble the salad, put the greens in a bowl, top with the red apple chips and the green apple slices. Garnish with the leek chips and drizzle with the dressing.
