Moroccan carrot salad

You are going to love this salad. I know many people who are not too crazy about carrots (like me…) but I don’t know anyone who doesn’t love this salad. The dressing of this salad suits the sweetness of the vegetable.

  • 2 c frozen or fresh carrot slices

  • 1 tsp sugar

  • 2 tbsp chopped cilantro 

  • 2 tbsp chopped preserved lemon (link) - optional

  • 3 garlic cloves, chopped

  • 3 tbsp Lemon juice 

  • 4 tbsp oil

  • 1 tbsp Harissa

  • 1  tbsp paprika

  • 1 tbsp cumin 

  1. Put the carrots in a pot, cover with water and add the sugar (it will bring the flavor out).

  2. Cook for about 15 minutes (don’t over cook them). Drain. 

  3. Add the rest of the ingredients and mix. Fix seasoning
