Indian rice pudding (Kheer)

Indian food it’s either you are crazy about it (like myself) or don’t like it all (like my husband)

i love Indian restaurant for many reasons: the basic and simple products in the dishes along with the strong flavorful spices, the red velvet chair covers and the colorful carpets but most of all, I go for the dessert Rice pudding. I am a true sucker for the sweet, sticky and rose-water infused rice.

The recipe below is vegan and very easy

  • ¾ cup basmati rice, washed

  • 2.5 cups non dairy milk (almond, cashew, coconut or rice)

  • 2 cups coconut milk

  • ½ cup sugar (or more if you prefer it sweeter)

  • 1 tbsp. good-quality ground cardamom

  • 1 tbsp. rose water

For garnish:

  • Pistachios, toasted and chopped 

  • In a pot, bring the sugar and the entire milk to a boil. Lower the heat

  • Add the rice, cover the pot  and cook on low heat for 20 minutes.

  • The consistency will be liquidy and thick. Turn the stove off and stir in the rose water

  • Divide into bowls and garnish with pistachios
