Indian rice pudding (Kheer)
Indian food it’s either you are crazy about it (like myself) or don’t like it all (like my husband)
i love Indian restaurant for many reasons: the basic and simple products in the dishes along with the strong flavorful spices, the red velvet chair covers and the colorful carpets but most of all, I go for the dessert Rice pudding. I am a true sucker for the sweet, sticky and rose-water infused rice.
The recipe below is vegan and very easy
¾ cup basmati rice, washed
2.5 cups non dairy milk (almond, cashew, coconut or rice)
2 cups coconut milk
½ cup sugar (or more if you prefer it sweeter)
1 tbsp. good-quality ground cardamom
1 tbsp. rose water
For garnish:
Pistachios, toasted and chopped
In a pot, bring the sugar and the entire milk to a boil. Lower the heat
Add the rice, cover the pot and cook on low heat for 20 minutes.
The consistency will be liquidy and thick. Turn the stove off and stir in the rose water
Divide into bowls and garnish with pistachios
