Chicken, stuffed with couscous, roasted in olives and raisins, in pomegranate molasses and honey sauce
6 chicken thighs
¾ cup green olives, rinsed 3 times
½ cup raisins
1onion, sliced
¼ cup pomegranate molasses
½ tsp. paprika
1 tbsp. honey
¼ cup chicken stalk
Salt and pepper
1 cup pre-cooked couscous
1 tsp. cinnamon
Mix the couscous with 2 tbsp. of the raisins and cinnamon.
Heat the oven (400)
Stuff the chicken with 1-2 tbsp. of the couscous mix by pulling out the skin of the chicken.Place it in a baking dish.
Mix the rest of the ingredients and pour over the chicken. Cover with foil.
Bake for an hour. Uncover and bake for 30 more minutes.
