Chicken, stuffed with couscous, roasted  in olives and raisins, in pomegranate molasses and honey sauce

  • 6 chicken thighs

  • ¾ cup green olives, rinsed 3 times

  • ½ cup raisins

  • 1onion, sliced

  • ¼ cup pomegranate molasses

  • ½ tsp. paprika

  • 1 tbsp. honey

  • ¼ cup chicken stalk

  • Salt and pepper

  • 1 cup pre-cooked couscous 

  • 1 tsp. cinnamon



  1. Mix the couscous with 2 tbsp. of the raisins and cinnamon.

  2. Heat the oven (400)

  3. Stuff the chicken with 1-2 tbsp. of the couscous mix by pulling out the skin of the chicken.Place it in a baking dish.

  4. Mix the rest of the ingredients and pour over the chicken. Cover with foil.

  5. Bake for an hour. Uncover and bake for 30 more minutes.
