Mint, lime and coconut popsicles

I like making vegan ice cream and popsicles at home. I enjoy experimenting in the kitchen with flavors and ingredients.

These popsicles are low-calorie, vegan and elegant.

For richer texture and taste, substitute the coconut milk with coconut cream.

  • ¼ cup mint, leaves only 

  • 2 tbsp honey (or more)

  • Lemon juice and zest from 2 lemons/ limes 

  • About 3/4 c coconut milk or any other milk. 

  1. In a food processor, grind the mint with the coconut milk. Strain.

  2.  Add the rest of the ingredients. 

  3. Divide into Popsicle molds or transfer to a container and freeze.
