Mint, lime and coconut popsicles
I like making vegan ice cream and popsicles at home. I enjoy experimenting in the kitchen with flavors and ingredients.
These popsicles are low-calorie, vegan and elegant.
For richer texture and taste, substitute the coconut milk with coconut cream.
¼ cup mint, leaves only
2 tbsp honey (or more)
Lemon juice and zest from 2 lemons/ limes
About 3/4 c coconut milk or any other milk.
In a food processor, grind the mint with the coconut milk. Strain.
Add the rest of the ingredients.
Divide into Popsicle molds or transfer to a container and freeze.
