Israeli-style Baba Ganush

This version calls for the use of mayo and not tahini. It’s very popular in Israeli BBQ joints as well as homes.

1 c eggplant pulp  

  • 3 tbsp. mayo

  • 3/4 tsp. salt

  • 3 tbsp.. lemon juice

  • 1 garlic  clove, crushed

              Mix all the ingredients well.
