Asian coleslaw

There are so many versions to this salad. This one is the current go-to one at my house.

It’s crunch and a bit zesty. Feel free to sub the nuts with any kind you like.

1/2 medium-size cabbage, shredded

2 cups of shredded red cabbage

3 carrots, shredded

2 scallions, chopped

3/4 cup of chopped nuts

For the dressing:

3 tbs. olive oil

3 tbsp. soy sauce

1 tsp. honey

2 garlic cloves, chopped

1 tsp. sesame oil

Optional- 1 tsp. Teriyaki sauce

2 tbsp. lemon juice

1 tsp. salt

1/2 tsp. black pepper

  1. Place all of the salad ingredients in a big bowl.

  2. Put all of the ingredients of the dressing in a jar or any shaker. Close and shake well. You can make ahead steps 1-2.

  3. Right before serving, pour the dressing over the salad and mix well. Top with the nuts and serve.
